The build no longer passes in an architecture. Buildarch is gone from main and globals, backend/script/build stamps only the version, and the startup and listen log lines report runtime.GOARCH under the key arch (#84, for sneak/project-management#19).
A plain docker build . stamps the git tag or short commit instead of dev: .git goes into the build context without its config, and a build that carries .git but cannot derive a version fails (#87, for sneak/project-management#21).
To know before deploying: the log key changes from buildarch to arch, and the value uses Go's names (amd64, arm64) instead of uname -m's (x86_64, aarch64).

backend/README.md no longer describe an architecture being stamped in.

The builder stage now has git and takes the version from the VERSION
build argument when one is given, otherwise from `git describe --tags
--always` of the repo's .git, copied to /git so go build does not see
it. A version that still comes out empty, dev or unknown fails the
build. ARG VERSION has no default. .dockerignore keeps .git/config out
of the build context, and the comments in script/docker and
script/cibuild no longer say .git is excluded.
